Hearty Mexican Herbal Brown Rice

Started early morning, as usual. Planned a mix of herbs instead of sauces, except for the tomato sauce. Today, lets do it the Mexican way, humming Bob Marley, listening to Spanish acoustic instrumental, and life gets its poetry in El Mariachi style! Poetry I say. Today I want to be like, a rustic day instead of deep, idealistic philosophy. It adds a different hue to the routine. A routine, no more, but another day in my paradise!

Ingredients

1 tablespoon oil

Julianne red and yellow bell pepper(1) each

Half small size red cabbage shredded

3 medium sized tomatoes diced

2 red onions, 1 carrot, 2 jalapenos chopped

1 bowl green peas

1 tbsp oregano, parsley herbs

1 teaspoon rosemary and thyme each

2 tbsp paprika, 1 tbsp black pepper powder, 1/2 tbsp turmeric powder

pinch of cinnamon powder

1/2 cup coriander chopped, 2 lemon wedges

2 tbsp ginger garlic paste

2 cups brown rice cooked

salt to taste

Easy Recipe

Heat oil, saute onions

Add carrots, tomatoes cook until tender

Add bell peppers, peas, shredded cabbage

Add all the herbs and ingredients

Cook until tender

Add cooked brown rice, 3 tbsp tomato sauce, cook until ready

Garnish with chopped coriander and squeeze lemon.
